Hello Richard, you are "only" connecting the audio output to the car. The phone's microphone is still used for calls. At least for me, this works well as long as I have the phone with a holder directly in front of me in the ventilation grilles. The phone may think that there should be a microphone at the other end and mutes it on the phone. You can only check this in the settings when the phone is plugged in. There seem to be 2 types of USB-C adapters, one without a sound card built in and one with. The Samsung is without a sound card, but is very very quiet on my Oneplus Nord2. I therefore ordered one of each, the "UGREEN USB C Jack Adapter USB C to AUX 3.5mm headphone adapter without DAC chip" for the OnePlus - and it works really well and one with a sound card for the Ipad, namely the "Adapter USB C to jack,Stouchi USB Type C to 3.5 mm headphone adapter Aux Audio Dongle,Hi Res DAC " which also works very well. You would have to find out which type is needed for the Google phone ... or just order both ;-)
