For bread doughs (so-called "firm yeast doughs"), a maximum of 1.5kg flour or a maximum total mix weight of 2.5kg applies. For so-called "soft yeast doughs" (which contain butter and eggs, for example), a maximum of 1.6kg of flour may be mixed. The maximum mixing weight here may be up to 3.1kg. My parents regularly make (firm) bread doughs with mixing weights of around 1.5 to 2kg without any problems.
