Through our Kilner fermentation set, gases and thus pressure can escape from the glass without oxygen getting in. This keeps the glass sterile, no germs get into the glass and the vegetables are guaranteed to stay fresh. Acidification is very easy, you only need to add water and salt. And vegetables, of course. The vegetables are cut into thin slices, mixed with salt and then the liquid is squeezed out. It is then layered tightly in the Kilner glass, water is poured on and the corresponding ceramic plates are placed on top. These are important to weigh down the vegetables. The glass is closed tightly with the lid and the special valve from Kilner is put on. Now the glass must stand for a few weeks.
