Induction hobs in the test - Quickly hot on cold coils

When hunger calls, induction is the quickest way to ensure hot food. The nimblest hob in the test heated one and a half litres of water from 15 to 90 degrees Celsius in about three minutes. Neither hobs with gas nor those with radiant heat get water boiling in such a short time. The turbo is in coils under the glass surface. They generate magnetic fields that cause eddy currents in the bottom of the pot. This heats up the pot and transfers the heat to its contents.
