The SHUN knife for right-handed users represents the "best season" for food. Each individual SHUN knife is a distinctive piece that combines craftsmanship with technology and design.
Ham Knife: With its pointed, long, and narrow blade, the ham knife allows for easy peeling of fish or poultry skin. The sharp blade slices meat into thin, smooth pieces or cubes without tearing the fibers.
Blade: SHUN professional chef's knives are made from a special, stainless Damascus steel with 32 layers. The inner layer consists of V-Max steel, which is highly corrosion-resistant and extremely hard (61±1 HRC), giving the blade unparalleled sharpness. The convex grind of the 20 cm long blade, enhanced by manual honing, achieves a sharpness that effortlessly handles even the most challenging cutting tasks. This sharpness, combined with the balanced weight of the knives, allows for comfortable, fatigue-free work. The hollow grind of the kitchen knives reduces the adhesion of the food being cut, allowing an air cushion to form between the cut material and the knife. This makes cutting easier and allows the cut material to fall away from the blade more quickly.
Handle: The 12.2 cm long handle made of finely laminated Pakkawood is ergonomically shaped and promises comfortable handling thanks to its symmetrical design, which is suitable only for right-handed users. Pakkawood is strong, durable, dimensionally stable, and extremely resistant to weather and moisture. The variations in color and grain are distinctive features of the wooden handle.
